The Christmas Dinner Menu


 

Cook up a storm in your kitchen this Christmas with these delicious dishes that'll have your guests talking for weeks! Here are our favourite Christmas recipes for a lip smacking appetiser, a delectable entrée and a tempting dessert…

Teriyaki-Glazed Bacon Water Chestnuts

  • What you’ll need: About 100 gm of pre-cooked bacon strips, 15 water chestnuts, 15 strips of red and green capsicum, and 3-4 tbsp of teriyaki glaze/sauce.

  • How to make it: Heat oven to 3500F. In the meanwhile, place strips of capsicum on water chestnuts, wrap carefully with bacon strips and secure with toothpicks, place in a baking tray and brush generously with teriyaki glaze. Bake for about 10 minutes and take the toothpick out before serving.


Basic Brined Turkey

  • What you’ll need: Approximately 10 litres of water, 1 cup salt, 1 cup sugar, ½ cup cider vinegar, 1 tbsp freshly ground black pepper, and 1 turkey (thawed, cleaned, rinsed and dried) weighing about 6 kg.

  • How to make it: In a saucepan, mix 4 cups water, salt, sugar, vinegar and black pepper. Cook on medium heat for about 10 minutes and stir frequently. Pour mixture into a plastic vessel big enough to hold the brine and turkey. Add remaining water and let the mixture cool completely. Then submerge the turkey in the brine, cover and refrigerate overnight (for upto 12 hours). Remove turkey from brine, rinse well with cold water and dry with paper towels. Your brined turkey is now ready to be cooked in whatever way you desire! 
 
 

Red Velvet Whoopie Pies

  • What you’ll need: 1 packet white cake mix, ¾ cup water, 3 egg whites, 2 tbsp. oil, about 100 gm semi-sweet cooking chocolate (molten), 1 tbsp red food colour, 100 gm cream cheese (softened), 4 cups marshmallows, 200 gm whipped topping, and 1 tbsp confectioners’ sugar.
 
  • How to make it: Heat oven to 3500F. Put together the white cake mix, egg whites, water and oil to form a smooth, lump-free batter. Then add food colour and molten chocolate and mix well. On a pre-greased baking sheet, drop about 2 tbsp of batter into 36 heaps (about two inches apart). Bake about 10-12 minutes and cool completely on a wire rack. Melt marshmallows in the microwave. Stir, cool, and add cream cheese. Mix well. Then, fold in the whipped topping. Spread 2 tbsp of this marshmallow mix on the flat side of 18 pies and top with the remaining 18. Sprinkle with confectioners’ sugar and serve.
