Picked in the middle of October, the healthiest grape bunches are selected and left to dry up naturally for 100 days in dry and well ventilated places. In January the dried grapes are fermented and vinified. This results in a warm, rich and powerful wine with a complex bouquet of fruit preserve and raisins.[/toggle_lite][toggle_lite title="About the Producer" opened=""]Originating in 1964 at Lazise, on the banks of Lake Garda, the House of Lamberti was the first to propose a new, modern identity for the wines of Veneto and, in particular, those of Verona. Rondinella 35%[/toggle_lite][toggle_lite title="Vineyard" opened=""]The grapes are sourced from the “Tenuta Pule” vineyard, in the commune of San Pietro in Cariano; the vines are trained by the “pergola”, “cortina pendent” and “cordone speronato” systems on clay, limestone, stony ground, well exposed to the south-west.[/toggle_lite][toggle_lite title="Vinification" opened=""]Towards the middle of October, before the start of the normal harvest, the healthiest grape bunches (about 20% of the total crop) are selected in the vineyard. These are collected by hand into 7kg wooden boxes and remain for about 100 days in dry and well ventilated places to dry up naturally. In January the dried grapes (sugar having been concentrated by the dehydration) are vinified by the red wine method. Fermentation temperatures and the period of skin maceration are carefully controlled and managed to produce an immediately pleasing fruity bouquet and soft and velvety tannins. The yield in wine is less than 40%.[/toggle_lite][toggle_lite title="Ageing" opened=""]18 months in oak casks; at the same time, a portion of the wine matures for a year in French oak barriques. After blending and bottling, the wine is allowed to rest for 4 months in bottle in order to further enhance its quality.[/toggle_lite][toggle_lite title="Tasting Notes" opened=""]Deep ruby colour, with a garnet rim; full and complex bouquet of fruit preserve, raisins, and violets with spicy and balsamic touches; rich, warm, powerful but balanced body with enticing overtones of balsamic herbs and ripe fruit (dried grapes, plums, fruits of the forest), with a well-defined, elegant, very lingering aftertaste of toasted almonds.[/toggle_lite][toggle_lite title="Analysis" opened=""]15% alcohol vol.[/toggle_lite][toggle_lite title="Food Suggestions" opened=""]Serve with roast or braised red meats, game and ripe cheeses.
