CELERY ROOT – Apium graveolens var. rapaceum
Celery root offers fine-grained white flesh. Although a close relative of celery, this lesser-known kin is far easier to grow. A duel-purpose vegetable. The root is vegetable, has a parsely x celery flavour. Use the leaves as a celery.
It requires a long growing season (120 days) and can take two to three weeks to germinate. Plant in spring or autumn. Plant in seedling trays (see our Plastic Seedling Trays) and transplant when large enough to handle. A generous amount of compost or rotted manure worked deeply into the soil before planting helps retain moisture and add nutrients. When the plants are 7 to 8 cm tall, mulch to conserve the soil moisture. Grow 20cm apart in rows 45cm between each other. During the growing season monitor the soil regularly to make sure it’s moist. Check for any lateral leaf shoots and snap these off to get a smooth crown.
