What does "subject to the applied terms and conditions; of each participating establishment" mean exactly? Are there any additional costs other than the voucher, meals and shipping cost?

There would be no additional cost except for the Cost of the Voucher the Meals. The cost of the meals varies from each establishment. The only other cost would be your drinks at the resorts but this would depend on how much beverages you purchase. This is not compulsory so if you do not drink you would not need to purchase.
